Coffee beans coming from all around the world are first quality only: they come from countries like Java, Jamaica, India and Brazil.

The raw coffee beans are subjected to a first olfactory examination just upon arrival to verify whether the product suffered any kind of contamination during transport.

Samples are roasted in an appropriate mini-toaster to check if the beans are in line with the standards.

It’s at this stage that we evaluate what the real taste is. Once the taste is verified, aftertaste needs to be evaluated: it has to be full and free of any acid and bitter flavours. The test ends with the judgement of the taste length inside the mouth, which must last for several pleasant minutes.

Each coffee needs different cooking times to always achieve the best results.

Roasting take place by using only heat conduction and this is one of the most important aspects that characterizes Ottobono. Our roasting machine is a Petroncini from the 50’s.

By reaching the maximum temperature of 200° C just for few seconds the best balance among flavour and aroma is obtained.

Quality controls are done by “Coffee-Sommelieurs” who check the coffee quality.
